Kurzfassung
An innovation technology centre from Obninsk, Russia, developed an installation for drying foodstuff (bread, fruit, berries, mushrooms, etc.) with microwave radiation. This technology has a set of advantages against conventional thermal methods of drying, including a high effectiveness and cost efficiency, due to low specific power consumption. The company seeks partners for commercial agreements with technical assistance.

Conventional thermal methods of drying are power-consuming, expensive and also require much effort for maintaining necessary modes of operation, in order to obtain high quality products.
In the microwave installation, due to microwave radiation energy, bulk heating of the material is achieved: the heat do not penetrate into the product from the surface, being generated in the entire volume of the product; there is no heat loss, which ensures uniformity and sustainability of drying.
The developed microwave installation of continuous operation with a
conveyor and agitator is designed for microwave drying of foodstuff and, in particular, bread crackers.
During the drying process, the raw material is disinfected, thus increasing the shelf-life of final products.
Processing of raw material is carried out at lower temperatures that allows saving thermolabile biologically active components, like vitamins, essential oils, pectins, etc. As a result, the obtained products have a high quality, attractive appearance and excellent flavouring.
The developed technology can be used at the food and baking enterprises for production of crackers, bread-crumb, flour goods and convenience foods with a long shelf life.
The microwave installation can be implemented as an independent module, or as a module built into an existing technological line.

Novelty of the offered microwave installation for drying foodstuff is using of optimized electromagnetic modes that allows raising considerably the efficiency of drying.
The basic advantages of the microwave processing are:
- uniformity and a high speed of heating,
- immediate start of operation (noninertance), ecological safety,
- reduced power consumption and therefore production cost,
- duration of processing is reduced by more than 10 times.
